Baked Feta Pasta Sauce

  1. Set Oven to 400
  2. Add tomatoes to baking dish, drizzle with olive oil
  3. (Optional) Chop shallots into half moons, add to dish
  4. (Optional) Crush garlic cloves, add to dish.
  5. Add oregano, chili flakes, salt
  6. Mix well to cover tomatoes
  7. Bake for 35-40 minutes until feta is browned and tomatoes wilted
  8. Stir baked mixture into a sauce.
  9. Optionally add pasta water to mixture it if you'd like
  10. Optionally add raw spinach for more veggies.
